Bunnery O.S.M. Muesli

(Serves 2 hungry people)
• 1 cup Bunnery Natural Foods O.S.M. Oatmeal
• ⅔ cup orange juice (preferably fresh-squeezed)
• ½ coarsely grated apple with skin
(if preparing in advance, toss with a teaspoon of lemon juice to avoid browning)
• 5 oz. plain Greek yogurt
• pinch of ground cinnamon
• a handful of toasted hazelnuts, almonds, or a combination of both
• a small handful of toasted coconut flakes (optional)
• a handful of fresh strawberries and sliced star fruit
honey or maple syrup for drizzling

Place the O.S.M. cereal and orange juice in a container and cover; refrigerate and soak overnight. When ready to serve the next morning, stir the grated apple, cinnamon, yogurt and half of the toasted nuts (and coconut, if using) into the moistened cereal. Spoon into bowls and garnish with strawberries, star fruit and remaining nuts. Drizzle with a ribbon of honey or maple syrup.
